We at Misty Leaf, a green tea brand, are not tea farmers—we’re Tea Merchants.

Large-scale farms with sufficient funding and personnel can handle every step, from production to sales. By leveraging their own e-commerce platforms and advertising, they’re able to achieve widespread exposure, build brand recognition, and successfully distribute their products.

Most of the teas you see on a daily basis likely come from these well-known farms that have mastered distribution. Shizuoka Green Tea and Uji Matcha are classic examples.

Meanwhile, many small-scale farmers are so consumed by the production process that they have little time or resources for sales and promotion.

In mist-shrouded mountain tea fields, such as those in Kirishima, the fog acts as a natural veil—softly filtering the sunlight and helping to grow truly exceptional tea leaves.

Organic Cultivation & Safety Certifications

Organic sencha, grown without chemical fertilizers, often struggles to achieve a rich flavor compared to conventionally farmed tea. However, the tea leaves we use at Misty Leaf are JAS-certified organic, and through meticulous soil preparation and rigorous management of our tea gardens, we’re able to produce tea leaves brimming with exquisite taste.

It’s also worth noting that in Japan, organic tea accounts for only about 6% of total production, making it a true rarity. Furthermore, the designated factory for Misty Leaf holds an FSSC 22000 certification—an international standard for food safety management—ensuring strict adherence to high quality and hygiene standards at every stage.

Advanced roasting perfected by the hands of seasoned artisans

High-temperature roasting can bring out a delightfully toasty aroma. However, if the heat is pushed too far, it may compromise the tea’s inherent flavors. Some teas do benefit from a stronger roast to highlight their taste, but we remain steadfast in our commitment to preserving the delicate essence of our premium tea leaves.

We also pay close attention to seasonal changes in temperature and humidity, meticulously adjusting the roasting process to maintain that perfect balance.

Often referred to as a “once-in-a-lifetime encounter,” the harvest of these tea leaves is an exacting process in which our tea masters engage all five senses to determine the perfect moment to pick. Each leaf is only plucked when its sheen, aroma, texture, and every other condition align flawlessly—resulting in a truly one-of-a-kind treasure.

After harvest, we analyze the leaves’ composition, while our tea masters personally assess their fragrance, flavor, and appearance. Only those that meet our stringent high-grade standards are ultimately used.

It appears to incorporate deep-steamed leaves, which might seem fragmented to the untrained eye. However, this technique results in a tea that is rich, flavor-packed, and delicious. It does require a fine-mesh strainer or teapot to brew perfectly. With abundant sweetness and umami, it tastes like a delightful blend of gyokuro and conventional sencha, with only a subtle hint of bitterness.

For optimal flavor, brew Japanese green tea (sencha) with gently cooled water at around 70–80°C (158–176°F). Use about 2–3 grams of tea leaves per serving and steep in approximately 90ml of water for about one minute. This method brings out sencha’s characteristic refreshing sweetness and slight astringency.

What ingredients are found in sencha green tea?

Sencha contains an array of beneficial components, including polyphenols such as catechins, vitamin C, amino acids (notably theanine), and caffeine. It’s a wonderful choice for anyone seeking a healthy daily beverage.

How should I store sencha green tea?

Keep your sencha away from direct sunlight, high temperatures, and humidity. Store it in an airtight container in a cool, dark place. Once opened, it’s best to consume it promptly to maintain peak flavor. For long-term storage, placing it in the freezer helps preserve its freshness—don’t worry, the leaves won’t freeze solid due to their low moisture content.

Can I store sencha green tea in the refrigerator?

Even in an airtight container, storing tea in the refrigerator isn’t recommended as it can absorb odors from other foods. For extended storage, the freezer is a better option. When you’re ready to brew, simply take it out and use it immediately.

Fine tea leaves still end up in my cup even with a fine-mesh strainer. How can I prevent this?

Our blend includes some deep-steamed tea leaves, which naturally results in a few fine particles slipping through. These fine leaves are perfectly safe and even add nutritional value, so if you don’t mind them, feel free to enjoy them along with your tea.

Is there a way to minimize the amount of fine tea leaves in my cup?

Yes! After placing the tea leaves in your teapot, start by adding just enough water to lightly moisten them. This allows the leaves to expand and clump together, reducing dispersion of fine particles. Also, try slowly tilting your teapot as you pour gently into your cup to keep the leaves from filtering through.

What’s the difference between organic sencha and regular sencha?
